Bridget's Recipe Corner

Valentine's
Day
right
around
the
corner,
I
thought
it
might
be a
good
idea
to
feature
something
a
little
sweet
to
share
with
your
sweetie.
Though
I
used
a
cake
mix
as a
base,
with
the
addition
of
the
extra
goodies,
you'd
never
guess
it.
The
reviews
have
always
been
good...we're
talking
chocolate
so
it's
pretty
hard
to
go
wrong.
Leftovers
bring
a
smile
the
next
day
as
well.
Kind
of
decadent,
but
well
worth
it.
Hope

Chocolate
Bundt
Cake
-
(with
a
little
extra
something-something)
For
the
cake:
1
box
Betty
Crocker
®
Triple
Chocolate
Fudge
Cake
Mix
3
eggs
1
1/2
c.
water
1/2
c.
Canola
oil
1/2
large
Cadbury
milk
chocolate
candy
bar
(shaved)
1/2
package
instant
pudding
mix
(chocolate
or
fudge)
For
frosting:
4 T.
butter
1
square
baking
chocolate
2
oz.
low
fat
cream
cheese
-
room
temperature
1 t.
vanilla
1/2
c.
Carnation
Hazelnut
creamer
(I
use
sugar
free)
2-3
c.
powdered
sugar
Heat
oven
to
350°.
Grease
Bundt
cake
pan.
I
use
cooking
spray
-
it's
much
easier
and
it
works
fine.
In
large
bowl,
beat
all
except
candy
bar
ingredients
for
the
cake.
I
shave
the
chocolate
directly
into
the
bowl,
using
a
carrot
peeler.
Fold
chocolate
into
the
mix,
blending
well.
Pour
evenly
into
prepared
pan.
Place
in
oven
and
cook
until
done
(toothpick
test
always
works
well).
While
cake
is
baking,
melt
butter
and
baking
chocolate
in a
heavy
saucepan.
Remove
from
heat
and
let
cool
approximately
5
minutes.
In
same
pan,
add
cream
cheese,
beating
well
with
electric
mixer.
When
blended
well,
slowly
add
a
little
powdered
sugar
and
a
little
creamer.
Continue
blending,
adding
sugar,
creamer
and
vanilla.
I
tend
to
prefer
my
frosting
on
the
thicker
side
so
use
a
little
more
powdered
sugar,
but
you
can
adjust
according
to
your
preference.
When
cake
is
finished
baking,
remove
from
the
oven.
While
the
cake
is
still
hot
and
before
you
turn
it
onto
the
cake
plate,
use
a
long
tined and
"thick"
fork
and poke
several
holes
all
around
the
bottom.
Spread
a
layer
of
frosting
on
the
base.
Let
the
frosting
soak
in
for
a
few
minutes.
Carefully
turn
the
cake
onto
plate,
gently
removing
pan.
With
the
same
fork,
continue
poking
holes
all
around
the
cake.
Spread
a
generous
layer
of
frosting
on
the
cake.
I
let
it
sit
for
several
minutes
and
then
repeat
with
the
frosting.
Enjoy
your
cake
with
your
favorite
after
dinner
beverage.
