Bridget's Recipe Corner
My kitchen is a
mess right now which is actually
a good thing. It's getting a
much needed 'face lift' which is
another good thing. As such, I
have not been able to cook a
whole lot, which according to my
children, is a bad thing.
However, I was able to use my
oven the other night and decided
to make one of their favorite
side dishes. If you like
crunchy, cheesy, sliced
potatoes, then you might like to
try this dish. It's one of our
favorites. Hope you enjoy it
too.
Cheesy Oven
Potatoes
(Four, generous servings)
8 Yukon Gold potatoes,
peeled & sliced thin
2 T. olive oil, can use more if
necessary
3/4 c. or more, freshly grated
Parmesan cheese (can substitute
another favorite)
Reese Cheesoning, optional
freshly ground pepper, to taste
Kosher salt, to taste
Cooking spray for cookie sheet
Preheat oven to 400°.
Place peeled and sliced potatoes
in large bowl. Drizzle olive oil
over entire bowl of potatoes.
Stir well. Sprinkle with salt,
pepper and your favorite
seasonings, (one of my favorites
is Reese Cheesoning)* and
1/2 c. Parmesan. Stir well.
Place potatoes in thin layer on
sprayed cookie/baking sheet,
with shallow sides. Bake
potatoes, stirring frequently
until cooked. Right before
removing from oven, sprinkle
with remaining cheese, toss
lightly to mix well. At this
point, I like to place them
under the broiler for a couple
of minutes for extra
crunchiness. This is optional of
course. Remove from oven and
serve with your favorite entrée.
