Bridget's Recipe Corner
The other night, I was in the mood to grill and I was also in the mood for pasta. As such, I decided to do both and combine them. The result was a fairly light springtime pasta dish. As usual, I made enough for my "battalion" and for snacking the next day. A very simple and quick dish to make for dinner... I really enjoyed the flavors of the grilled vegetables/chicken with the pasta. Hope you enjoy it too.
Grilled Veggie & Chicken Springtime Pasta
1 pkg. chicken tenders (about 1 1/2 lbs.)
1 8 oz. pkg. Crimini mushrooms, sliced
1 8oz. pkg. Button mushrooms, sliced
2 small green zucchini, quartered
1 small yellow zucchini, quartered
2 cloves garlic, left whole (adds flavor when grilling)
1/2 medium yellow onion, sliced
1/2 - 3/4 lb. asparagus, sliced diagonally
1 - 2 t. seasonings for poultry (whatever you like- I used Wash Park All-Purpose
Seasoning from the Savory Spice Shop - downtown Littleton)
3-4T. Alouette® artichoke & garlic spreadable cheese (may need to add more)
Kosher salt
Freshly ground black pepper
1-2 t. Good Seasons Italian Dressing Mix
olive oil
1 1lb. box Barilla Piccolini Farfalle pasta (mini bowtie)
2 grill pans
In medium-sized bowl, add chicken. Drizzle lightly with olive oil and sprinkle generously with seasonings of choice plus Good Seasons dry packet. Mix well and set aside for about 10-15 minutes. Meanwhile, in large bowl, combine all the veggies. Drizzle with olive oil, freshly ground pepper and Kosher salt and mix well. Preheat grill. Prepare grill pans and place on grill when hot. Cook the chicken in one pan and the vegetables in the other. Meanwhile, bring large pot of water to boil. Cook pasta to al dente. Drain, place in large bowl. Add grilled chicken and vegetables and Alouette cheese. Mix well. adjust seasonings as necessary. You may need to add more Alouette®.
I served this with toasted cheese bread and freshly sliced English cucumbers and tomato wedges with red wine vinegar. Enjoy with your favorite beverage. I might suggest Mantel Blanco.
