It's
official.
I'm
now
the
mom
of
two
teenage
boys.
I'm
not
sure
where
the
time
went,
but
it
did.
We
celebrated
my
youngest
son's
13th
birthday
this
weekend
with
some
wonderful
friends
in
Manhattan
Beach.
He
requested
steak,
no
surprise
there.
He's
a
big
beef
eater.
Because
he's
usually
willing
to
try
anything,
I
opted
to
make
a
stuffed
sirloin. Seemingly,
it
was
enjoyed
by
all...there
were
no
leftovers.
Hope

Birthday
Sirloin
2
lb.
sirloin
(I
recommend
a
thick
cut
1
1/2
-
2")
3/4
lb.
mushrooms,
finely
chopped
1
shallot,
minced
1 t.
garlic,
minced
1/2
c.
green
onion,
finely
chopped
1/4
-
1/2
c.
freshly
grated
Parmesan,
or
your
favorite
flavor
steak
seasonings
(I
like
to
use
Montreal
Steak
Seasonings)
garlic/onion
powder
or
salt
for
rub
olive
oil
butter
long
toothpicks
or
small
bamboo
skewers
Preheat
oven
to
325°.
In
large
skillet,
heat
2 t.
olive
oil
and
2 T.
butter.
When
butter
is
melted,
add
shallots,
garlic
and
green
onion.
Stir
well.
Cook
approximately
5
minutes,
until
shallots
are
soft.
Add
mushrooms,
continue
cooking
for
approximately
10
minutes.
Remove
from
heat.
When
cool,
add
cheese.
Mix
well
and
set
aside.
Rub
seasonings
on
both
sides
of
meat.
Using
a
sharp
knife,
cut
a
pocket
through
the
middles
of
the
steak.
Be
careful
not
to
go
through
the
other
side.
Take
spoonfuls
of
vegetable/cheese
mixture
and
place
in
the
pocket.
Secure
the
meat
with
toothpicks/skewers.
For
best
results,
start
cooking
the
meat
in
oven
(approximately
15
minutes)
and
finish
on
the
grill.
I
served
this
with
twice
baked
potatoes
and
roasted
asparagus.
A
yummy
birthday
treat.
Try
it
with
your
favorite
bottle
of
wine.
