enjoy
playing
tennis,
but
realized
a
long
time
ago
I
would
never
make
money
playing
the
game.
Truth
be
told,
I'm
really
in
it
for
the
treats
we
enjoy
after
we
play
(apologies
to
my
doubles'
partner
and
our
wonderful
team
captain).
Fortunately,
my
tennis
buddies
still
let
me
play
for
the
team.
Monday
night,
I
was
responsible
for
bringing
an
appetizer.
As
much
as I
love
chips
and
salsa,
I
prefer
something
a
little more
substantial
for dinner,
so I
decided
a
salad
was
in
order.
Something
quick,
but
yummy
and
semi-healthy.
Asian
cabbage
salad/slaw
was
my
salad
of
choice.
By
the
way,
this
is a
great
salad
for
a
large
group.
Hope

"In
a
hurry"
Asian
Salad
For
the
salad:
1
bag
Rainbow
Salad/Slaw
1
bag
Broccoli
Salad/Slaw
1/2
head,
or
more
Napa
cabbage/sliced
very
thin
5
green
onions,
finely
diced
5
small
cucumbers
(I
buy
them
at
Costco),
sliced
thin
cherry
tomatoes
(or
not,
proceed
with
caution)
3 T.
sesame
seeds
2
packages
Oriental
Ramen
noodles
1
packet,
seasoning
from
noodles
Wasabi
&
Ranch
wonton
strips,
optional
(I
purchased
them
in
the
produce
dept.
at
King
Soopers)
1/2
c.
chopped
dry
roasted
peanuts,
optional
For
the
dressing:
1/2
c.
cider
vinegar
1/8
c.
canola
oil
2 T.
sesame
oil
1-2
t.
dry
mustard
1/4
c.
soy
sauce
1/2
packet
of
seasoning
from
Ramen
noodles
1/2
c.
Wasabi
Viniagrette
dressing
(purchased
it
at
Sunflower
Market)
freshly
ground
pepper
to
taste
Break
Ramen
noodles
into
pieces.
Place
in
sauté
pan
with
sesame
seeds,
one
packet
of
seasoning
from
noodles
and
toast
over
low
to
medium
heat
for
approximately
8-10
minutes.
Watch
carefully
as
they
can
burn
easily.
When
toasted,
remove
from
heat
and
let
cool.
Meanwhile,
place
vegetables
in
large
bowl,
mixing
well.
Place
all
dressing
ingredients
in
glass
jar
with
lid.
You
may
need
to
"tweak",
but
taste
first
before
you
do. Shake
well
and
set
aside
for
tossing.
When
noodles
have
cooled,
add
them
to
the
salad.
Toss
well.
Add
dressing
a
little
at a
time
and
toss.
I
prefer
to
go
"light"
on
the
dressing
so I
rarely
use
it
all.
Feel
free
to
use
as
much
as
you
like.
If
desired,
top
with
peanuts
and
wonton
strips.
If
you
are
not
pressed
for
time
and
would
like
added
protein,
you
may
add
grilled
chicken
strips.
You
might
pair
this
salad
with
a
new
summertime
staff
favorite
New
Age
White
Wine.
