Bridget's Recipe Corner
A
couple
of
weeks
ago,
one
of
our
wonderful
sales
reps.
had
us
try
some
delicious Lemoncello,
a
special
lemon
liqueur
produced
in
Italy.
Knowing
that
I
love
to
try
new
things
for
my
recipe
corner,
I
started
brain-storming
about
using
it
in a
dessert.
This
was
the
first
of
several
recipes
that
I
wanted
to
try.
The
"squirts"
in
my
life
enjoyed
them.
Hope
you
enjoy
them
too.
Lemoncello
Bars
For
the
crust:
2
sticks
butter
1/4
t.
salt
1 c.
Biscoff
cookies,
about
1/2
the
pack (ground
in
food
processor
or
blender)
*
1/c.
powdered
sugar
2 c.
flour
For
the
filling:
4
eggs
juice
of
two
lemons
4 T.
flour
1/2
c.
Lemoncello
(I
used
Sogno
di
Sorrento
Lemoncello
-
available
in
the
store)
1 c.
granulated
sugar
lemon
zest
(optional)
Preheat
oven
to
350°.
Grease
13x9
baking
dish.
In
large
bowl
beat
room
temperature
butter
and
powdered
sugar
together
until
light
and
fluffy.
Ad
the
flour,
salt
and
cookie
crumbs.
Beat
until
the
dough
just
comes
together,
but
ingredients
are
blended
in.
Press
the
dough
into
the
baking
dish
and
bake
approximately
20
minutes
or
until
lightly
browned.
Remove
from
oven.
Cool
on
wire
rack.
Place
the
granulated
sugar
and
eggs
in
bowl.
With
the
mixer,
beat
until
they
are
nice
and
smooth.
Add
the
lemon
juice,
lemon
zest
and
Limoncello.
Stir
to
combine.
Fold
in
the
flour
and
mix
well.
Bake
in
oven
approximately
20
minutes
or
until
filling
is
set.
When
cool,
dust
with
powdered
sugar
(optional).
*I
first
tried
these
cookies
on a
flight
from
Denver
to
Chicago.
As
usual,
I
was
starving
and
as
usual,
they
only
offered
one
packet
of
cookies.
I
must
have
looked
desperate
as
the
flight
attendant
quickly
brought
me
several
more
packs.
I
liked
them
so
much,
I
actually
called
the
(800
number)
to
order
more.
I
have
not
been
able
to
find
them
locally
until
I recently
came
across
them
at
the
Walgreens
near
the
store.
Kind
of
like
a
ginger
snap,
but
better.
Great
with
coffee
or
tea
as
well.
I
thought
they
would
add
nice
texture/flavor
to
the
dough.
