Bridget's Recipe Corner

Last Saturday, the creators behind Tini In A Bottle™ were at our wine bar sampling their products. Not only are their mixes fabulous with spirits, they can be used for marinades as well. In fact, this week's recipe features Spiced Pear mix with pork tenderloin. They were more than happy to have it featured in the newsletter. I think it sounds fantastic. Hope you enjoy it too.

Spiced Pear Pork Tenderloin**

1 to 1 ½ lb pork tenderloin
¾ cup ‘TINI IN A BOTTLE Spiced Pear mix
Salt and pepper to taste
1 tablespoon canola oil

Preheat oven to 400 degrees.
1. Wash pork tenderloin and trim excess fat and
gristle. Pat dry with paper towel to remove excess
water. Season with salt and pepper.
2. Place the canola oil in a sauté pan over high heat.
Add the pork tenderloin and sear for 2-3 minutes
on all sides.
3. Place the pork tenderloin in a baking dish and
pour Spiced Pear mix over the tenderloin.
4. Cover the baking dish with aluminum foil and
cook in oven for 20 minutes.
5. Uncover the tenderloin and cook for 10 to 15
minutes longer or until tenderloin registers 150
degrees on a meat thermometer.
6. Let the meat rest for a few minutes before slicing.
7. Pour remaining sauce over the sliced tenderloin.
* For a nice accompaniment, peel and cut sweet potato into french fries. Place them on a cooking sheet and drizzle olive oil over the potatoes. Season to taste with salt and pepper. Bake for about 20 to 30 minutes with the pork tenderloin. You also can prepare asparagus the same way as the sweet potatoes.
** You can marinate the pork tenderloin with the Spiced Pear mix in a plastic bag for 4 hours or over night (keep refrigerated until ready to use).
