Hearing the birds chirping outside my window yesterday morning, my thoughts turned to spring and the excitement that we have survived another winter. You have to admit, it's good feeling. However, after hearing the forecast for the next couple of days the reality of living in our fare state returned and I started craving something hearty to eat. That said, I decided it might be time to make one last batch of chili. Instead of my standard ground beef or chicken chili, I went with a steak chili. Go big or go home, right? This Kickin' Chili was the result. Spicy, hearty and filling, we enjoyed it. I hope you do too.
"End of winter" kickin' chili
1 lb. steak, cut into cubes (I had a little leftover/uncooked tenderloin & I also used sirloin)
1 t. cayenne pepper
2 t. Lodo Red Adobo seasonings (Savory Spice Shop)
1 t. cumin
dash red pepper flakes
1 medium onion, finely chopped
1 -2 shallots, finely chopped
1 clove garlic, minced
1-2 jalapeño peppers, seeded and finely diced
1 Poblano pepper, seeded and finely diced
1 28oz. can crushed tomatoes
3 14 1/2 oz can diced tomatoes with jalapenos (I used Kroger brand)
1 4oz. can diced green chiles
1 4oz. can tomato paste
1 15 oz. can black beans, drained and rinsed
1 15 oz. can hot chili beans
1-2 t. canola oil
1 c. stout beer

Fun toppings/mix ins
sour cream
grated cheese (cheddar or Mexican blend work well)
chopped red onions
Chili Cheese Fritos (c'mon, they're good)
Place cubed meat in medium size bowl. Drizzle 1 t. oil over the meat and then sprinkle seasonings over the meat, stir well, coating generously. Let sit about 10 minutes. Heat oil in large pot. When warm, add onion, shallot and garlic, stirring well. Let cook about 3-4 minutes until softened. Add the steak, diced jalapeño, poblano peppers and beer . Let cook approximately 8-10 minutes, stirring well. Then add the tomatoes and tomato paste. Adjust the seasonings as necessary and let simmer several hours. Add the beans the last 30 minutes of simmering. When ready to serve, enjoy with your favorite toppings.
